Yinzhen Silver Needle, The White Jasmine Tea

• Introduction.
Yinzhen is a common or abbreviated title of Bai Hao Yinzhen. This type of white tea is mostly cultivated in the Fujian Province of China. It is negligibly produced outside the province thus making it a specialty of Fujian lands and in common terms it is called as Yinzhen only. It also comes from the family of silver Needles. Yinzhen is the priciest amongst the white teas and is suppose to be the most valued specie because it is produced only with the top buds. Yinzhen is picked up from Da Bai in most of the cases but there is an exception to it and that is Big Bud teas from Yunnan.
• The Yinzhen White Tea.
The science News of April 15, 2000 states that the white tea is almost five times more protective against the cancer as compared to the green tea. The white teas are much closer to the natural as they are less processed and dried in air or they are sun dried, although presently the producers have started using very hot air to speed up the process of drying. The other teas are rolled green whereas the white tea is not rolled until it is fully dry. Traditionally they are plucked at the commencement of spring season like early March and then from 15th March till 15th April the buds are air or sun dried. White teas are neither rolled nor thinned out, until they are totally dry of moisture, whereas on the contrary the green teas are rolled and fired to stop any more oxidation. The process of rolling includes the slight breaking of the leave's cellular structure in order to allow some essential oils to be released and promote oxidation.
The Yinzhen is picked when the buds still are firmly enclosed in freshly grown leaves. The fresh leaves are recognized by the silky white hairs on them. As is said earlier that the Yinzhen is the least processed white tea so these white hair are quite oftenly visible on the end product also. It is commonly believed that more velvety the leaves, the more delicate and of better quality the tea becomes.

• The Yinzhen Brewing.
It is best brewed at the temperature range of 170 to 185 F, with at least two teaspoons full of Yinzhen silver needles as they are pretty light in weight and it is to be ensured to add enough leaves in a pot for the reason. It needs to be steeped for at least 5 minutes at first and keep adding a minute or two for every repetitive steep. It is perfect to take after light dinners and is instructed to avoid having it after the spicy foods. It may prove to be the liquor best suited for health.
